Coniglio in umido con Olive Nere, Pomodori Secchi e Porro
Ingredienti:
gr 600 coniglio disossato
gr 100 olive nere
N° 1 porro di media grandezza
gr 50 pomodori secchi
erbe aromatiche a piacere
Olio Extravergine di oliva, Sale Pepe, vino bianco q.b.
Procedimento:
Tagliate a piccoli pezzettini la carne di coniglio.
Tagliate a Julienne il porro, e a pezzetti piccoli i pomodori secchi.
Versate un filo d’olio in una padellina antiaderente e ponetela sul fuoco. Aggiungete il coniglio a pezzetti, lasciate rosolare qualche minuto e aggiungete il porro. Abbassate al minimo la fiamma e dopo qualche minuto, quando il porro sarà leggermente imbiondito, aggiungete il pomodoro secco.
Bagnate con poco vino bianco (ma che sia buono, mi raccomando!) e lasciate evaporare. Capirete quando sarà il momento, quando il profumo del vino sarà scomparso. Aggiungete un bicchiere di acqua fredda e fate riprendere il bollore, lasciando che il tutto diventi un po’ più ristretto e cremoso.
In ultimo aggiungete delle erbe aromatiche a vostro piacimento, e le olive nere.
